Tofu: hard, medium, soft, silken, Chinese, Japanese, crappy westernised tofus

Tempeh: tasty Indonesian fermented soy beans

The ancient art of Taiwanese mock meat, & seitan (non-animal protein substitute, often gluten-based)

Other soy products: cheese, yogurt, cheese, milk, cream

Notes soy controversy and health issues (excellent: fermented soy like miso & tempeh; great: whole beans, tofu, milk; good: mock meat; the bad: highly processed soy foods/concentrated isoflavones – not common in vegetarian products I’ve encountered, more an issue for the junk food/non-veg/non-wholefoods industry).
